A simple serving of okra can add class and character to any meal. While the humble vegetable is often sidelined and served as a side, in this Southeast Asian dish, the beloved okra is paired with punchy, aromatic, flavor-packed ingredients like sesame oil, fried shallots, and sambal, turning the subtly sweet flavor of okra into the canvas for a riotous vegetable-forward dish!

Yield: 2 servings
Ingredients:
12 to 16 okra (~6 oz)
1 tablespoon vegetable oil, or another neutral oil
1.5 tablespoons (23ml) light soy sauce
1 tablespoon (15ml) sesame oil
1 tablespoon (7g) fried shallots
2 teaspoons (10g) sambal

Method:
Heat the vegetable oil in a large frying pan or skillet over high heat. Then add the okra and sauté them in the pan for 3 to 5 minutes, until slightly charred. Stir occasionally. (Alternatively, you can air-fry them for 6 to 8 minutes at 350F.)
When done, transfer okra to a bowl. Pour the light soy sauce and sesame oil into the bowl. Toss until the okra is evenly coated.
Transfer the okra to a plate, sprinkle with fried shallots, and add a dollop of sambal on top! This dish is best eaten warm with rice and other meaty sides.
