I can’t believe this is Lanyap Cookery’s 40th virtual cooking class. That’s pretty awesome!
To celebrate this milestone, I have chef Sam Kang back in the virtual kitchen. Sam taught the very first class I put together in January of 2021. If that hadn’t worked out… these classes might not have ever happened.
For everyone that was a part of that first class, where we made enoki mushroom XO sauce and mazemen, you know how fun it is to cook with Sam. For those of you that have joined this virtual cooking journey since then, let me tell you a little bit about Sam. He’s from California but most of his culinary career has been in New York. He has worked at Momofuku Ko, Eleven Madison Park, and been the head chef at Bar Wayo (a Momofuku restaurant). He was a cheftestant on the most recent season of Top Chef. Sam is also very passionate about teaching the next generation how to cook and make healthy meals at home.
I’ve been wanting to have a class with raw fish for a while now. Sam was very into the idea and that’s how this class came about.

Ingredients kits: If you live in the Denver area, you should get your raw salmon from Tom’s Seafood in Lakewood. They have also been nice enough to put an ingredients kit together, so you only need to go to one store for this class! For $29.99, you can get an ingredients kit for making 2 chirashi bowls. Just visit their store or give them a call by Wednesday 9/7 to reserve your kit.
Raw Salmon: If you are feeding two people in this class, you will need 1/2 pound of salmon loin cut. This is the thickest part of the salmon. If you have never purchased raw salmon to eat at home, this class is the perfect time to start doing so. Your best bet for getting salmon that can be eaten raw is by asking your local fishmonger what they have that you can eat raw. You can also ask the person behind the counter at your local high-end grocery stores or markets. There are also many places online where you can purchase salmon that can be eaten raw. I say support your local shop though, like the aforementioned Tom’s Seafood if you are in the Denver area.
