Lavender: We will be using dried lavender flowers in this class. If there are still World Markets where you live, they sell dried lavender in the store. Or you can pick some up from Amazon. We will be using the dried lavender flowers in the gnocchi and in a simple syrup which will be used in the cocktail and the dessert. You might be able to find it in the grocery store spice aisle, it will probably be next to the saffron.
Lamb Chops: We will be cooking lamb loin chops. This is a bone-in cut that may also be called the lamb t-bone.
Marcona Almonds: You want them roasted or fried. If you can only find raw ones, you can roast them before class. We will tell you how.
Equipment Needed:
Large pot for boiling gnocchi
Skillet (for lamb/tofu and broccolini)
- You can’t go wrong with a cast iron skillet. Either this size or this size will be great.

Jigger (usually comes with your cocktail shaker set)
Small Strainer (optional, this is for double straining the cocktail)
Food processor

dried lavender flowers
Fresh or dried thyme
Kosher salt
Black Pepper
Pecorino or parmesan cheese
Lamb loin chops (1 per person)
- They look like mini t bones. Available regularly at Whole Foods, sometimes I see them at halal butchers, rarely on the shelves at my usual supermarkets.
- vegetarians, sub firm or extra firm tofu
Rasted red peppers
Marcona almonds, roasted or fried
- if you can only find raw, we will tell you how to roast them before class
