Who is teaching this virtual cooking class?

Nicole Ponseca

This class will be taught by author, James Beard award finalist, cook, and restauranteur Nicole Ponseca. After starting her career in the advertising industry, she opened Maharlika and Jeepney in NYC.

In 2018, the cookbook that she wrote with Miguel Trinidad I Am A Filipino And This Is How We Cook was published. It was Named a Best Cookbook of the Year by The New Yorker, Boston Globe, Chicago Tribune, Los Angeles Times, New York Times Book Review, Houston Chronicle, Food52, PopSugar, and more! Nicole is passionate about sharing Filipino food and culture and has helped elevate the cuisine along the way. I am so happy that she is teaching this cooking class for us!

What will we be making in this virtual cooking class with Nicole Ponseca?

Lumpia!

  • If you are a vegetarian, you will be making Lumpiang Prito

  • If you like shrimp and pork, you will be making Lumpiang Shanghai

Filipino Flash cocktail

  • Tiki cocktails were heavily influenced by Filipino bartenders. This one has rum, pineapple, lime, and ginger!

Lumpiang Shanghai

Special Equipment Needed:

Deep Fryer or Large Dutch Oven for frying the lumpia

Thermometer (instant read or candy thermometer)

Baking Sheet

Cocktail shaker w/ strainer


Ingredients: A list of exact quantities will be sent within 24 hours of signing up for the class

Vegetarians – Substitute sweet potato, tofu, napa cabbage and mung bean sprouts for the shrimp and pork
