In this class we will make homemade flour tortillas, cheesy refried beans, and salsa roja with chile de árbol. That’s right, we are making bean burritos!

Meet Lesley

Lesley founded Primary Beans with her sister, Renee. They started Primary Beans to deepen our connection to the food we eat and the land it comes from. And because they love beans.

Notes on some of the ingredients:

Equipment Needed:

  • Pressure cooker or a large pot

    • For cooking the dried beans before class. Just follow the Primary Beans bean cooking guide.

  • Large non-stick skillet for the refried beans

  • Cast iron skillet or griddle for the tortillas

  • Rolling pin

  • Food processor or blender for the salsa

  • Cocktail shaker

  • Small Strainer (optional, this is for double straining the cocktail)

  • Muddler (or the flat end of a wooden spoon)

Ingredients: (a list of exact quantities will be sent within 24 hours of signing up for the class)

  • Bread flour, and (if you can find it) Sonora wheat flour (such as from Hayden Mills)

  • Fine sea salt

  • High-quality lard or chicken fat (such as from Fatworks or Epic Provisions)

    • vegetarians sub butter or refined coconut oil

  • Primary Beans Bayo beans

  • White onion

  • Garlic

  • Avocado leaves (optional, dried or fresh, if you can find some)

  • Ball/block of queso Chihuahua or other melty Mexican cheese 

  • Chiles de árbol

  • Ripe Roma tomatoes

  • Cider vinegar

  • Kosher salt   

  • Tequila

  • Agave syrup

  • Lime juice
