Breakfast Banh Mi

Pillowy bread. Crunch from the scallions. Creaminess from the avocado. Heat and acidity from the hot crushed peppers. Heartiness from the slightly runny fried eggs.
This sandwich has it all. And it is more fun to eat than avocado toast.
Could I get fired for saying that!!??
Banh mi sandwiches are just the best. They are the right size (who needs a 12” sandwich to be full?) and generally the right price. If you are paying double digits for your banh mi lunch, something is wrong.
Hopefully your favorite place to get banh mi – I’m partial to grilled pork myself – is also a bakery. If they are, you can buy the bread from them.
Servings/Suggestions
If you can multitask, you can probably slice everything and assemble the sandwich while the eggs are cooking. So, for you, I would start with Step 5 and while that is happening do all the other steps.
I look to cook the eggs in a baby cast iron skillet.
If you don’t have hot crushed peppers, use your favorite spicy condiment.
Ingredients
2 scallions, aka green onions
2 eggs
1 avocado (we will only use 1/2)
2 spoonfuls of hot crushed peppers
1 banh mi loaf
Mise en place
(Set yourself up for success before you start cooking)
Rinse the scallions
If your avocado is in the refrigerator, take it out so it can come to room temp
Warm Fat > Cold Fat
Directions
Step 1
Slice the tips off of the white and green parts of the scallions. Then cut each in half. Then cut into thin slices lengthwise.
Step 2
Slice the ends off of the bread. Then slice down the middle but not all the way through. We still want it to be one connect piece of bread. Now, hollow out the loaf by pulling out some of the excess bread. Save that for another use, or give it to whoever you are making this sandwich for. They are probably hungry and will eat anything.
Step 3
Now, halve the avocado. The best way is to cut through the skin and the flesh with your knife until you hit the seed, then rotate the avocado around until it has been halved. Your knife stays stationary during this process.
Peel the skin off of the half of the avocado that does not have the seed. Then cut into thin slices.
Step 4
Assemble the sandwich. First, layer in the the avocado. Then add the scallions. Then add a few spoonfuls of the hot crushed pepper.
Step 5
It is time to cook the eggs. Heat up your over medium high heat pan. Then, crack the eggs into a little bowl. Once the pan is hot, add some oil/butter/bacon fat. Then add the eggs. Once the whites set at the bottom, I like to put a lid on the pan and reduce the heat so that the top of the whites cook. As soon as the whites are cooked on the top, remove the lid. Add some cracked black pepper and a sprinkle of salt.
Step 6
Add the eggs to the sandwich. Enjoy!
