Potato Chips with Hot Sauce and Lime

Potato chips, hot sauce, and lime. It is a perfect Mexican snack, and one that I first had at a wedding in Mexico City.
The bride and groom called this snack simply cochinada. To be more specific, this snack is papas con cochinada. Cochinada means filth and, well, chips are junk food. You should probably make sure you eat a salad or something soon too.
For this snack want to use kettle chips, because they are sturdy enough to stand up to the hot sauce and the lime juice. Any plain or unsalted kettle chip should be fine. We want the hot sauce to be on the thicker side. Instead of Tabasco or Cholula, think Valentina or Sriracha. Obviously, there are bonus points available if you use a condiment from Mexico. Double bonus points if you are using chips from Mexico.
For the lime, we want to use the zest and the juice to really double-down on the lime flavor. Remember to zest the lime before you cut it. It will just be easier that way. Trust me.

Step 1
Place as many chips as you want to eat on a plate or bowl. Drizzle with hot sauce. If you are feeling fancy, use a microplane to grate some lime zest over the chips. Cut the lime and squeeze the juice on the chips.
