Do you cook pizza sauce?
Almost all great pizzerias use tomatoes straight from the can, mix the sauce, and that’s it. If you cook the sauce before you put it on the pizza, you will concentrate the flavors but you will lose the natural sweetness and some of the acidity of the tomatoes. Whenever Chef Justin is making a tomato sauce for pizza, everything goes in raw. The cooking happens when pizza cooks.
How long can you store pizza sauce in the refrigerator?
Store any leftover sauce in an airtight container in the refrigerator. Use within 5 days for peak freshness.
Yield:
1 quart of pizza sauce
Ingredients List
(1) 28oz can crushed tomatoes (Chef Justin prefers Jersey fresh tomatoes)
2 cloves of garlic, peeled
1 red onion, peeled
Season to taste with kosher salt or sea salt (Chef Justin prefers Baleine fine sea salt)
How to Make Pizza Sauce
Step 1
In a large bowl, add your tomatoes. Microplane the garlic cloves directly into the bowl. Grate about 1/4th of the onion on the large holes of a box grater. Add that to the bowl. Season with salt and stir everything together. Taste and adjust seasoning, if needed. Store any leftover sauce in an airtight container in the refrigerator.
